1 package vanilla wafers
2 (8 oz) packages cream cheese, softened
3/4 cup sugar
2 eggs
1 tsp vanilla

Place cupcake liners in muffin tins. Place one vanilla wafer in bottom of each. Mix rest of ingredients in mixer until smooth. Fill muffin tins 3/4 full. Bake at 375 degrees for 15 minutes. Makes 12 cheesecakes. Or use mini muffin tins and put 1 tsp crushed vanilla wafers in bottom of each, and this will yield 48 mini cheesecakes.
