Potato Latkes

3 cups grated Idaho potatoes
1 onion grated
2 eggs, beaten well
½ cup matzo meal
½ tsp. salt, or to taste
Pinch of pepper
Oil for frying

Potatoes and onions cam be grated in food processor. Mix all ingredients. Heat oil in frying pan on medium heat. Place tablespoons of mixture into hot oil and fry on both sides until brown.
